This protein meal is so simple with the great flavor for the fluffy protein muffins.

The best part is you can make this to eat on for two days for one person or multiple people. The extra protein is one of my favorite healthy breakfast ideas. You can double the high-protein waffles for meal prep to have leftovers frozen for busy mornings.
The delicious Mounjaro breakfast perfect for my Mounjaro -79lb (so far!) weight loss journey. It is also the perfect breakfast with this high protein waffle recipe.

Protein Muffins
The homemade protein muffins can be made a few different ways than my recipe below. You could also add if you wished:
- Switch egg for 3 egg whites
- Switch mashed ripe bananas for greek yogurt
- Switch butter for 1 tablespoon of unsweetened applesauce
- Switch coconut oil for butter

You can also add into the recipe card for healthy banana protein muffins:
- Chocolate chips
- Blueberries to make blueberry protein muffins (instead of banana)
- Splash of maple syrup, liquid sweetener or honey for added sugar sweetness
- Peanut butter, cashew butter or almond butter
- A second mashed banana to make them taste more like chocolate banana muffin
- Extra coca powder
- Pinch of sea salt
Muffins Using Protein Powder
The chocolate protein powder from Biocare Protein Dietary Beverage packet makes the chocolate protein muffins have a delicious flavor for quick snacks.
Biocare Protein is my favorite protein powder for my Mounjaro weight loss as it is made for semaglutide and tirzepatide patients.

You can use silicone muffin liners or paper liners for the muffin cups.
The recipe could even be a high protein chocolate banana bread if you put into a loaf pan if you wanted to vary your healthy snack.
For longer storage, you can freeze the healthy muffin recipes as the perfect way to maximize your time if you have an enriched, busy schedule like I do. You can even double the recipe next time if you want to maximize time and healthy ingredients too (hello banana on the countertop – I’m looking at you!).
Banana And Protein Muffins
I have moved to storing my protein cake/pancake mix into glass containers on my countertop since I use them so much. It makes baking banana and protein muffins so much easier.

Protein Muffin Recipe
Equipment
- Muffin Baking Tin
- Mixing Spoon
- Fork to mash banana
- 12 Cupcake/Muffin Liners
Ingredients
- 1 dry packet Biocare Protein Dietary Beverage
- 1.75 cup Protein Cake Mix/Pancake Mix (Kodiak Protein is what I used)
- 1 Egg
- 1 tbsp Butter
- 1 Banana
- 1 teaspoon Vanilla Extract
- 1 cup Unsweetened Almond Milk
Instructions
- Preheat oven to 350 degrees.
- Line muffin tin with cupcake/muffin paper liners.
- Mix Biocare Protein Dietary Beverage (dry packet), protein cake mix/pancake mix, egg, vanilla extract and unsweetened almond milk together.
- Smash the banana and mix in room temperature butter.
- Add banana and butter to mixture. Mix together.
- Add batter to 12 muffin liners.
- Bake for 16-18 degrees.
- Can stay in airtight container in fridge for two days or freeze for 3 months.
