Another option for making the perfect healthy dinner is using boneless skinless chicken breasts or even frozen chicken that you thaw the night before. I find using the chicken thighs gives more flavorful chicken, but that is personal preference.

Equipment
- 1 Slow Cooker
Ingredients
- 2 lbs Organic Chicken Thighs (Doesn't have to be organic & can also be chicken breast)
- 2 jars Salsa (Total 32 ounces)
- 3 tablespoons Taco Seasoning
- 1 cup Spinach (Optional)
- 1 package Siete Taco Shells (optional)
- 1/4 cup Sour Cream (Optional)
- 1/4 cup Shredded Cheese (Optional)
Instructions
- Cut up chicken thighs or chicken breasts into small pieces.
- Add to slow cooker two jars of salsa (totaling 32 ounces), chicken and taco seasoning.
- Heat slow cooker on high for 4.5 hours.
- With the last 10 minutes left, stir in spinach for optional and extra nutrients.
- Add meat ontop of salad to make a taco salad. OR, add meat to taco shell adding additional cheese and sour cream (optional).
