This protein meal is so simple with the great flavor! It’s full of vitamin B and vitamin C. This easy side dish has so much flavor and is a great way to eat a healthy side dish.

The best part is you can make this to eat on for two days for one person or multiple people. This nutritious, root vegetables recipe has so much protein that you can make with ingredients for whatever your preference is.
The delicious Mounjaro lunch or Mounjaro dinner have been perfect for my Mounjaro -79lb (so far!) weight loss journey. It is also the perfect side dish with the earthy flavor, too!
Baked Root Vegetable Recipe

The high protein baked root veggies can be made a few different ways than my recipe below. You could also add if you wished:
- Fresh Herbs
- Red Onions
- Golden Beets or Red Beets
- Celery Root
- Little Balsamic Vinegar
- Red Potatoes or regular potatoes
- Butternut Squash
- Fresh Thyme
- Garlic Powder
After making the roasted vegetables, put into an airtight container in the fridge for up to two days.
Bake Root Vegetables
I love using Costco frozen Root Vegetables that include sweet potatoes, parsnips and carrots. You could easily get these at any frozen foods aisle at the grocery store for this easy recipe.

Additional, to chop the sausage and peppers I added, I used a Veggie Chopper. I highly recommend THIS CHOPPER (SHOP HERE).
You could use a mandoline slicer too.

Root Vegetable Recipe
Equipment
- 1 Cast Iron Skillet
- 1 Vegetable chopper or cutting board/knife
Ingredients
- 3 cups Frozen sweet potato, parsnips and carrots bag (OR cut up sweet potato, parsnips and carrots) (Puravita is my favorite)
- 16 ounces Chicken Breakfast Sausage (Amylu is my favorite)
- 6 eggs
- 1 Chopped Pepper
- 1/2 cup Tomatoes
- 1 tbsp olive oil
- 1/4 teaspoon sea salt
Instructions
- Preheat oven to 400 degrees.
- Add olive oil to cast iron skillet.
- Add frozen sweet potatoes, parsnips and carrots to cast iron skillet.

- Cook for 20 minutes. Stir.

- Add in cooked, cup up chicken sausage, cup up tomatoes and cut up peppers. Cook for another 20 minutes.

- Take out and stir. Put back into oven to bake for another 15 minutes.

- Add eggs in and bake for final 5-6 minutes.

- Total baking time is 60 minutes.
Recipe Roasted Root Vegetables
The recipe roasted root vegetables can be made with different flavors or however you like chopped vegetables. My favorite way is the Costco frozen root vegetables and Costco chicken breakfast sausage.
