Easy refrigerator pickles recipe that is delicious, quick, tastes incredible and is simple to make! I love that I can quickly make the refrigerator pickles dill or less dill pickles if I want.
Refrigerator Pickles
I’m an average mom and wife. I like quick, simple recipes. I created this recipe to have delicious, electrolyte-enriched pickles on my weight loss journey (so far -60lbs down on my weight loss journey!).

Ingredients For Pickles:
- 1 LMNT Electrolyte Stick Citrus
- 1 LMNT Electrolyte Stick Unflavored **(If you want spicy use LMNT Lemon Habanero or Mango Chili)
- 🥒6 Kirby Cucumbers (the short kind. If you use the big, regular cucumbers, they will get squishy)
- 3/4 white vinegar 5% acidity
- 1 tablespoon coriander
- 3 tablespoons garlic
- 1/2 teaspoon mustard seeds
- 4 tablespoons of dried dill or 4 sprigs of dill (this is a lot!)
- 1 cup of cold water
- Wide Mouth Quart Mason Jar
Pickle Directions
1 – Wash your Kirby pickles.
I wash my Kirby cucumbers . And then soak cucumbers in vinegar and baking soda to get any bug and pesticides off for 20 minutes.
And then rinse cucumbers.

2 – Boil vinegar and LMNT Electrolyte together into roiling boil. Mix well so electrolytes are dissolved (will have a murky color).

3 – Let boil cool for 5-10 minutes.
4 – Will mixture is cooling, chop up cucumbers into pickle spears shape.

5 – Stuff cucumbers into wide mouthed quart mason jar.
6 – Pour cooled vinegar and LMNT Electrolytes into jar.
7 – Add spices and other ingredients into jar.

8 – Add water if cucumbers are not fully covered.
9 – Put jar into fridge for 24 hours & eat after 24 hours!
Cucumbers need to sit in brine for excellent taste!
Enjoy and eat pickles for 3-4 days! (You could go up to a week, but I always eat mine before then.)

Quick Pickle Fridge Directions:
- Wash your Kirby pickles.

- Put jar into fridge for 24 hours & eat after 24 hours!
